Some Facts • Trypsin is produced in the pancreas as the inactive proenzymetrypsinogen. • Trypsin uses a special serine amino acid in its protein-cutting reaction, and is consequently known as a serine protease. • Each has a particular taste for protein chains: trypsin cuts next to lysine and arginine. • Trypsins have an optimal operating pH of about 8 and optimal operating temperature of about 37°C.
