Michel Pinot acquired the winery and vineyards in 2000 and runs the winery together with his two children, Matthieu and Alexandra, today.   4. Chateau Ferry Lacombe is located in Provence, in the southeast of France. It’s in the heart of the Arc Valley, at the foot of the Sainte-Victoire mountain range, 12 miles east of Aix-en-Provence. The Mediterranean-Continental climate has contrasting day and night temperatures along with the gusty northern Mistral wind, making it an ideally located vineyard for the production of Provence’s rosé wines. The Mistral wind is a cold, dry wind which, especially in the winter, blows down from the Rhône Valley, and can reach over one hundred kilometers (60 miles) per hour. The Mistral wind helps to naturally dry the grapes thus avoiding mildew and traditional grape diseases.   6. The vines are trellised using the Guyot system and the soil consists of mostly clay and limestone. Each year, the soil is carefully tilled to loosen it at the onset of winter. This helps to promote deep root growth, protect against drought and contributes to the unique expression of terroir. These cultivation techniques help to avoid the use of herbicides, instead, the winery uses natural fertilizers that are composted on site. The northeastern exposure of the vineyard fosters a slower ripening of the grape which contributes to flavor and aides in aroma development.   7. The vineyards use integrated farming techniques and follow the Terra Vitis Charter for sustainable viticulture. Respecting the environment is a primary concern in the vineyards and all activities associated with vine growing and winemaking follow this charter.   8. Harvesting is carried out at night to collect the coldest grapes possible, thereby favoring a better maceration time, essential for the extraction of aromas. The grapes are systematically sorted and de-stemmed. Thermo-regulated stainless steel tanks ensure the control of temperatures during the winemaking, resulting in better color and the aromas. The juice is brought below 10°C (50°F) for a good settling and fermentation temperatures are maintained between 16-18°C (60-64°F). Bottling of the wine is done with nitrogen then stored in a temperature controlled warehouse to ensure an optimal preservation of the product.
