Desserts made with wholesome ingredients like wheat flour, jaggery are always a good choice for your health.   Wheat flour barfi, popularly known as aatekibarfi, is one such healthy sweet dish from the state of Gujarat.   3. A few tips Most sweet dishes are sugar-based and thus unhealthy for regular consumption. But using a healthier substitute like jaggery can have its challenges.  Fundamentally, sugar syrup in most barfi recipes aids in giving shape and strength to the barfi. However, jaggery might not contribute to the same effect.  Thus, you may need to tread with extra caution, while shaping and handling these wheat flour barfis. A few more useful tips for the recipe are-  Firstly, you should always use high-quality wheat flour to prepare any wheat flour dish. You should opt for premium quality wheat products like those offered by India Gate.    If you are following the recipe and using jaggery, which does not cooperate while shaping, you have to be extra careful with flour.  You can make this barfi with the same quantity of sugar as well. However, you may need to attain one-string consistency before attempting with sugar.  You can use any flour of your choice for this barfi recipe. Although maida, ragi or a blend of wheat and plain flour, are recommended.

Ingredients • ½ cup (100 grams) ghee or clarified butter • 1 cup (160 grams) wheat four or atta • ¼ teaspoon cardamom powder • ½ cup (120 grams) powdered jaggery or gud Instructions To begin with, take ½ cup ghee in a large kadhai.  Next, roast a cup of wheat flour on a low flame. Continue roasting until the flour gets aromatic. The flour shall become golden brown in about 20 minutes. Take the Kadhai off from the stove and let it cool for about a minute. Add ¼ teaspoon cardamom powder and ½ cup jaggery, while the flour is still warm. Mix all the ingredients and continue till the jaggery melts and blends well. The heat of the wheat flour shall be enough to melt the jaggery. Do not over mix, as it gets difficult to set when it cools down. Transfer the prepared mixture to a greased tray and set it as a block. Let it rest for 15 minutes or until well set. Take a sharp knife and cut square pieces from the tray.  Now, enjoy this wheat flour barfi or store them in an airtight container for up to a week.
