KNOW • What a standard component is UNDERSTAND • What advantages and disadvantages there are to using standard components in food industry BE ABLE TO • LIST what standard components could be used in the context of the preparation sheet. • EXPLAIN why standard components would be beneficial in preparation of bread based products. • DEMONSTRATE understanding of topic through past exam question to develop technique.

  5. They are ready prepared ingredients called STANDARD COMPONENTS

  6. How would you write a definition of a standard component? • You have 2 minutes to try and write your own definition of a standard component. • A standard component is a ready prepared ingredient that will be used in production of a food product. It is used to ensure a consistent final outcome and to remove steps in the final production of a product so that they are all the same.

  7. What are the advantages? • No skills required • No preparation for some sections of a dish required • Assembly of sections only required. • Less time required to produce a product. • Can be cheaper to buy in bulk and store than buy as needed.

  8. Are there any disadvantages? • Can be expensive to buy • You don’t have as much control of the nutritional profile of the product. • You are not in control of the ingredients that might be added – such as additives, preservatives etc. • May need to buy in bulk to get best price so is dependant on orders in.

  9. Case Study...... • A pizza factory mass produces thousands of products per day. To speed up production it relies on standard components to help speed up production and ensure that each product is the same. • Think of your favourite pizza and list what ingredients could be a standard component..... • You have 5 minutes.

  11. Application of knowledge. • Exam boards have in the past put the exam questions you are about to see in to test your knowledge. • They can be easy marks to achieve which can make or break what grade you get. • Let’s try the following and see how you score.
