  2. Celebrating a Luau • Traditional luau feasts were eaten on the ground and without utensils • Mats were rolled out and held beautiful centerpieces made of leaves, ferns, and flowers • Foods were cooked in an underground oven

History of the Luau • Luaus are traditional Hawaiian celebrations • Originally called ‘aha ‘aina, these celebrations became known as luaus about 150 years ago • The term luau originates from the Hawaiian and other Polynesian languages, and is the name for the taro leaf • Taro leaves are combined with others foods, such as chicken or fish, and then baked in coconut milk

  4. Luau Delicacies • Roasted pulled pork cooked in an imu • Poi: Mashed taro root • Laulau: Taro leaf tips and fish or chicken wrapped in ti leaves • Lomi salmon: A salted fish marinated in lemon juice, tomatoes, and onions • Plantain bananas, yams, fresh fruits
