  1. Classification of Sausages Fresh Sausages These sausages require cooking, they can be grilled, fried, poached or boiled. A few examples of fresh sausages are British Chipolata Cumberland Chorizo Bratwurst

  2. Cured Sausages Sausages can be preserved by various curing methods like drying, salting and Smoking.

  3. The various cured sausages are Mettwurst Kabanos Spanish Chorizo Keilbasa Thuringer

  4. Cooked sausages Some sausages require part cooking or thorough re-heating, by either boiling or poaching. The various cooked sausages are Frankfurters Mortadella Vienna Sausage Saucisse de Morteau

  5. Blood Sausages These sausages are made of pig's blood mixed with fat, a filler like bread crumbs, and other flavorings that vary from region to region.  They're usually sold precooked, but most people heat them before serving.

  6. Making of sausages 1) Sausages are made from beef, veal, pork, lamb, poultry and wild game, or from any combination of these meats.
