  1. Greek Cuisine The Facts The Greek People Traditional Greek cuisine ranges from salads to seafood to lamb and veal. Greek Salad- Tomatoes, olives (with pits), onions, feta cheese, cucumbers, and olive oil Gyros (your-ohs)- pita bread, lamb, tomotoes, tzatziki (sauce), french fries, ketchup, mustard, and onions Seafood-Kalemari (squid), octopus, sardines, fish Meats- lamb, veal (calf meat) Greek Cuisine is served family style, in courses. The first course includes the salad and wine or water. Next are the potatoes, starches, and noodles. Meats or the main course are next, followed by a small dessert. Most restaurants serve a small popsicle on a plate. Most Greek people are very family oriented. Once their trust has been earned, they are very open and generous. They love to talk and tell stories, often leading to “greek time.” Greek people are very laid back and don’t care about punctuality. Often they will be 30 minutes to an hour for a meeting or event, hence “Greek Time.” A common custom in Greece is the siesta. A siesta is an afternoon nap. After lunch, everyone goes home and relaxes or takes a nap. During this time, stores, restaurants, and other public places shut down. The Greek people respect their history and cherish the value found in it. As a country hundreds of thousands of years old, Greece has centuries of history. The history begins with ancient Greece, leading to the Roman Empire and into modern Greek independence.
