  1. -:Potato Patties Recipe:-: (INDIAN) Time to prep & cook: 45 minutes Source: KitchenFact NOTE: This recipe can be enjoyed on its own or paired with spiced garbanzo beans (chana masala). See Step 10 for further instructions. Ingredients: •4 to 5 medium potatoes, boiled •1 teaspoon salt •1 teaspoon red chili powder •1 teaspoon cumin powder •1/2 lemon, juiced •1 bunch cilantro, roughly chopped •canola oil for frying Instructions: STE 1: Boil potatoes in a large pot of water until tender TIP: You can use a pressure cooker to cut down on preparation time of the potatoes. Look for cracks on the surface of the potatoes to show that they are done. Use about 2 inches of water in the pressure cooker pot rather than filling the entire pot as you would when boiling. Be careful! Pressure cookers can explode if opened without releasing the pressure properly. Make sure to read the instructions to your pressure cooker before you use it. STEP 2: Allow potatoes to cool completely, about 10 to 15 minutes. When the potatoes are cool to the touch, remove their skin. You can hold the potatoes with

  2. a paper towel if they are still too hot. Be sure to cut away any darkened spots on the potatoes. STEP 3: Place potatoes in a flat-bottomed dish. Using a potato masher or the back of a fork, gently cream the potatoes. Do not over-mash the potatoes as you want them to have some lumps. STEP 4: Wash and roughly chop the cilantro into about 1/2 inch pieces. STEP 5: Add salt, chili powder, lemon juice, and chopped cilantro to potatoes. Using your hands, mix together until well blended. STEP 6: Form potatoes into balls roughly the size of golf ball, then flatten to 1/3 to 1/2 inch patties. Using your fingers, gently pat the edge of the patties, flattening them all the way around. TIP: Coat your palms with vegetable or corn oil to prevent potato patties from sticking to your hands. STEP 7: Coat the bottom of a large shallow pan with about 1/4 inch oil and place over medium high heat. STEP 8: Fry patties until golden brown, about 4 minutes on each side, flipping only once. STEP 9: Remove the patties when both sides are golden brown and place on a plate lined with a paper towel to drain. STEP 10: Enjoy the aloo tikkis by themselves or top with chana masala, a sprinkle of diced red onions, chopped cilantro, thin sev (fried chickpea flour noodles), sweet chutney, and green chutney to create the popular Indian street food dish, Aloo Tikki Chana Masala.
