  2. Fermentation can be found in nature (fruits) and is used to make alcohol. Starches and sugars are converted to alcohol and carbon dioxide from the enzymes in yeast. This process is called alcoholic fermentation. Fruits will start with sugar (glucose) and when given energy (sun) will ripen and convert to ethyl alcohol and carbon dioxide. Before + = After

  3. Reactants and Products Decomposition 2 ethyl alcohols 2(CH3CH2OH) Covalent Glucose C6H12O6 Covalent + Energy (sun) = 2 carbon dioxides 2(CO2) Covalent

Rearrangment Glucose= 6 carbons 12 hydrogen and 6 oxygen Glucose breaks down into 4 atoms, 2 ethyl alcohols and 2 carbon dioxides 2 carbon dioxides= 2 carbons and 4 oxygen 2 ethyl alcohols= 4 carbons, 12 hydrogen and 2 oxygen All together all 4 molecules contain the same amount of atoms as one glucose molecule

  5. Scientists and History • The actual formula has 12 reactions but for this presentation we have used the simplified version • In the 1930’s 2 German biochemists, G.Embdem & O.Meyerhof worked out the sequence of reactions of how glucose ferments.

  6. Process & Use • Fermentation can be used to make alcohol like wine, beer or distilled alcohol (vodka) • Large vats like these are used in the fermentation process to brew beer.

  7. Chemical Change • Fermentation of fruit is a chemical change • Although fermentation is a chemical change it shows physical changes • Fruit will start out unripe and hard and then as the process progress’ the fruit will get squishy and juicy. • Some animals can even get “drunk” off of overly ripe fruit http://www.youtube.com/watch?v=A0Xsqo-n_AE
