WineProduction Duringaging,residuesettlestothebottomofthebarrelandform sedimentcalledthelees.Winemakersmayseparatethewine fromtheleesinaprocesscalledracking,transferringthewineto cleancasks (5).Finally,thewineismechanicallybottled (6),corked,andpackagedfordistribution.Inwhitewine productionthegrapesareseparatedfromtheskinsandstems beforefermentation.Thegrapesarepassedthrougha destemmer-crusher ,andthemustisimmediatelypassedthroughapress thatappliespressuretoseparatethejuicefromtheskinsand stems.Theremainingsteps,fermentation ,aging ,racking ,andbottling ,aresimilartothoseofredwineproduction.
