Soften the onion, ginger and garlic
Add chicken, cook until sealed
Add the peppers
Drain pineapple juice and add another 200ml water, add to pan
Simmer for 10-15 minutes or until sauce thickens
Add 4 tbsp ketchup, 2 tbsp vinegar, 2 tbsp sugar and pineapple pieces
Boil 500ml water, add 150g rice, boil until cooked
