Why do we need to register • FDA Food Safety Modernization Act (FSMA) • The FDA Food Safety Modernization Act (FSMA), the most sweeping reform of our food safety laws in more than 70 years, was signed into law by President Obama on January 4, 2011. It aims to ensure the U.S. food supply is safe by shifting the focus from responding to contamination to preventing it.
What this means for the maple industry • The maple industry has had a very low level of food related illness. Maple syrup is a 66 brix product. (66%sugar) This high level of sugar does not allow many pathogens to survive and the level heat that is required to process the syrup destroys most of the mold and fungi. • For the reasons listed above that is why the Maple industry has not been highly regulated.

Where will I need my FDA account number? • Many buyers of wholesale syrup in 2014 will be requiring your State of Wisconsin license number and your FDA account number prior to purchasing your bulk syrup.
How do we make sure the maple industry does not become highly regulated? • Common sense production practices • Cleanliness • Food grade storage • Know the producers that you buy sap and syrup from and their production practices.

What Does NSF Mean? • NSF by definition is: National Sanitation Foundation • This group rates production and production practices to certify that tanks and containers are safe to hold food grade materials or potable water. • If you can buy a stainless tank and you have to buy a poly tank make sure the poly tank is an NSF rated storage tank.

How Common are food Alergies • Last year 1 in 500 adults and 1 in every 1000 children have had a severe reaction to nuts. • Keep food items out of the sugarhouse and packaging facilities. • Wash hands before going to work in processing or packaging facilities. • Most of the retail locations are requiring allergen statements from their vendors. • What are you using for defoamer?
Buying Sap • Equipment utilization = larger return on investment • Many sugar makers have invested a great deal of capital in evaporators, reverse osmosis machine, and filters to make high quality syrup. • The large investment in the processing equipment (fixed cost assets) can dramatically lower the profit margin of the producer.
Pofitability • Spreading your fixed costs over a larger amount of taps or over more gallons of sap processed will build your profit margin. • Generally speaking, the more hours you can spend processing sap and utilizing your equipment, the more profitable your operation will be. The is especially true for large operations with energy efficient ROs and evaporators.
