  2. What’s all about Brunch? The idea of Brunch first originated in England as a concept of making people eat on days when they miss breakfast and are fast approaching lunchtime. But Now, this idea has been revolutionized and people willingly choose to have brunch meals. We have a whole lot of recipes and ideas that one can conquer during brunch. Chhole Bhature Ingredients • 1 cup boiled Chole • Sunflower Oil • ½ tsp Jeera • ½ cup chopped Onions • ½ tsp chopped Ginger • 2 tsp chopped Garlic • 2 tsp Chhole Masala • 1 tsp Chilli Powder • ¼ tsp Turmeric Powder • 2 tsp Coriander (Dhania) Powder • Salt to taste • 1 cup All-Purpose Flour (Maida) • 2 ½ tsp Curd Recipe • Heat 2 tsp Sunflower Oil in a non-stick pan. • Add ½ tsp Jeera to the oil and saute. • Now, add ½ cup chopped Onions, ½ tsp chopped Ginger, and 2 tsp chopped Garlic. Saute for 2 minutes. • Add 2 tsp Chole Masala, 1 tsp Chilli Powder, ¼ tsp Turmeric Powder, 2 tsp Coriander (Dhania) Powder, Salt as per taste, and 1 cup of water. • Mix well and mash the chole with mashers. • Meanwhile, knead the dough with 1 cup Vikram Mills’ Maida, 2 ½ tsp Curd, and ½ tsp Oil. Only use water if the dough is hard. • Keep aside covering via a muslin cloth for 20 minutes. • Make balls and flatten them out in a circular shape. • Now, deep fry the bhatura in Oil until brown. • Serve hot and delicious.

  4. Atta Biscuits Ingredients • 1 cup Whole Wheat Flour (Atta) • 1 cup Powdered Sugar or Jaggery Powder • 4 tsp Milk • A pinch of Salt • ½ cup Ghee • 1 tsp Baking soda • 1 tsp Cardamom (Elaichi) Powder • A pinch of Nutmeg (Dalchini) Powder Recipe • To prepare Atta biscuits, whisk together 1 cup of Whole Wheat Flour or Atta, 1 tsp Cardamom Powder, and a pinch of Nutmeg Powder in a bowl. • Add a pinch of salt and set the mixture aside. • In another bowl, combine ½ cup melted Ghee and 1 cup Powdered Sugar. Then, add 4 tsp Milk and 1 tsp Baking Powder. • Combine both the mixtures together. • Use your hands to mix the mixture well to make a soft dough. • Wrap the dough in paper and refrigerate it for 30 minutes. • Now, take a small portion of the dough and flatten it out. • Now cut and arrange them on a baking tray. • Bake in a preheated oven at 170°C for 10 to 12 minutes. • After being properly baked, remove them from the oven and let them cool on a cooling rack. • Following which keep it in an airtight container to avoid contact with moisture.

Atta Ladoos Ingredients • 1 cup Whole Wheat Flour (Atta) • ½ cup Clarified butter (Ghee) • ½ cup Butter • 1 cup Sugar • ⅓ cup crushed Almonds • ¼ Tsp Cardamom Powder Recipe • Dry roast Whole Wheat Flour (Atta) on low medium flame until it turns light brown. This should take about 6-7 minutes. • Add almonds to it and roast the mixture for about 3 more minutes. • Keep stirring it continuously. • Now, add clarified butter (ghee) to the mixture and keep roasting until it turns light brown and has a sweet aroma. • Turn off the heating flame and transfer the mixture to another bowl. Let it cool. • Now add, Sugar and Cardamom Powder to it. Mix well. • To make the ladoos, take about 2 Tsp Atta mixture into your palm. Gently press the mixture between your palms to make a ball. • Keep the ladoos aside on a plate to cool. After cooling the Atta Ladoos, put them into an airtight container.

Uttapam Ingredients • ½ cup Oats Flour • ¼ cup Whole Wheat Flour (Atta) • 2 Tsp Besan • 2 Tsp Semolina (Sooji) • 1 Tsp Lemon Juice • A pinch of Baking Soda • Salt to taste • ¼ Tsp Oil • ¼ cup chopped Onions • ¼ cup chopped Tomatoes • ¼ cup chopped Capsicum • 1 Tsp chopped Green Chillies • 2 Tsp Coriander Leaves (Dhania) Recipe • Combine ½ cup Oats Flour, ¼ cup Whole Wheat Flour (Atta, 2 Tsp Besan, 2 Tsp Semolina (Sooji), and ½ cup water in a bowl and mix well. • Cover the mixture with a lid and keep it aside to settle for 15 minutes. • Add 1 Tsp Lemon Juice, a pinch of Baking Soda, 5 Tsp Water, and Salt. Mix well. • Heat a non-stick Tawa. • Pour the mixture into the Tawa and spread in a circular motion. • Sprinkle chopped ¼ cup Onions, ¼ cup Tomatoes, ¼ cup Capsicum, 1 Tsp Green Chillies, and 2 Tsp Dhania. • Pour 1 Tsp oil on it and cook for 2 minutes. • Serve with Chutney.
