  2. I am François: a reformed chef, bon vivant, photographer, and author of two cookbooks. Who am I? I grew up the proud son of French immigrants who taught me to love food and live a life full of passion and joy. My earliest attempts at cookery began with the filleting of my sister’s goldfish at age two and a braised rabbit dish made with my pet rabbits by age seven. I eventually stopped cooking my pets and went to the highly esteemed New England Culinary Institute in Vermont. After graduating top in my class from my cooking school, I began a career in a number of highly acclaimed kitchens, including Chef Louis Szathmary’s restaurant The Bakery in Chicago, Old Drovers Inn, a Relais and Chateaux property in New York, and a stage at Joel Robuchon Gastronomie restaurant in Paris, before opening the award-winning restaurant Pili Pili in my hometown of Chicago, rated in the Top Ten new restaurants in the World by Food and Wine magazine in 2003. While working with Robuchon, I began to shape my personal culinary philosophy of “Cuisine Actuelle,” which showcases the natural flavor in the ingredients I use to create my dishes. I specialize in simply prepared Mediterranean-inspired cuisine that is enhanced by my appreciation and knowledge of fine wine, craft beer, charcuterie, and cheese. In line with my belief that food should be prepared without unnecessary distractions or alterations, I aim to create honest, healthy, and delicious cuisine that is approachable and always delightful.
