Sodium bicarbonate, which is another name for baking soda, is a leavening agent that helps cookies rise and spread while they're baking. It turns into carbon dioxide gas when it comes into contact with acidic foods like brown sugar, yogurt, or buttermilk. This gas gets stuck in the dough, making it spread.
