Choose the Right Fish When you buy from an online farm, you can be sure you're getting a healthy and delicious arctic char. Reputed farms use sustainable methods to ensure the health of their fish. 2. Check for Bones When makingroasted arctic char, the first thing you need to do is check for bones. Then, you can use a pair of tweezers to remove any bones.

  3. After you have checked the fish for bones, you will need to rinse it off with cold water. Pat the fish dry with a paper towel before you start cooking it. 3. Scale the Fish Scaling is the process of removing the fish scales. You can do this by using a knife or a fish scaler. First, wet your hands and the knife/scaler to prevent sticking.
