Before the event At the time of booking the event we confirm guest numbers and other details such as Menu choices, time of the event, type of menu chosen, any customization to the menu, dietary requirements, event address and arrival time.   3. On the day of the event We arrive 1 hour prior to the guests to allow us plenty of time to setup and start preparations. As guests start to arrive and socialize, drinks are served followed by Tapas Then we begin the theatre of cooking the paella Our chefs enthusiastically prepare paella out in front for everyone to see. As we combine traditional paella ingredients in large shallow pans, gentle aromas fill the air. As guests gather around the pans, our chefs encourage them to participate in the paella preparation. It’s fun and exciting, and everyone wants a turn! When the paella is ready, we call your guests up to the pans and serve them. Everyone comes together in this communal setting, unlike anything they’ve encountered before. Once everyone has finished their Paella we clear all the plates and rubbish away and begin serving Dessert.
