  2. CHOCOLATE  PANCAKE Vanilla and chocolate batters are swirled together here to make extra special pancakes. Serve with choclate syrup, various berries and powdered sugar.

  3. INGREDIENTS 150g/5½oz plain flour 1 ½ tsp baking powder ½ tsp bicarbonate of soda 2 tsp granulated sugar pinch salt 2  eggs 125ml/4fl oz milk 80g/2¾oz plain yoghurt 2 tbsp vegetable oil, plus extra for frying 1 tsp vanilla extract 1½ tbsp unsweetened cocoa powder  chocolate syrup, vrious berries and powdered sugar to serve

  4. METHOD Place the flour, baking powder, bicarbonate of soda, sugar and salt in a bowl and stir with a whisk to combine. Place the eggs, milk, yoghurt, oil and vanilla in a bowl and mix until combined and smooth. Pour the liquid ingredients into the dry ingredients in the bowl and gently combine with a whisk until all the flour is incorporated (try to minimise how much you stir, it’s fine if there are still some small lumps). Pour 150g/5 ½ oz batter into a separate bowl and add the cocoa powder. Stir until just combined. Brush a medium, non-stick frying pan with some vegetable oil and place over a medium heat. Once hot, turn the heat down to low. Take 1 teaspoon of the cocoa batter and drizzle into the pan in a small swirl, roughly the size of a pancake. Pour 1 heaped tablespoon of vanilla batter on top of the swirl.  Finally, drizzle 1 teaspoon of cocoa batter on top of the vanilla batter. Cook until the pancake is golden underneath (around 2 minutes) then use a metal spatula to flip the pancake. Cook until the other side is golden then transfer to a plate. Keep warm. Repeat with the remaining batter, adding more oil to the pan as needed, until all the pancakes are cooked. Serve the pancakes warm with chocolate syrup, various berries and powdered sugar.

  5. BAKING POWDWER BISCUITS

  6. INGREDIENTS 2 cups of Flour 2 tbsp Baking Powder 1/2 tsp Salt 1/2 cup of Shortening 3/4 cup milk

METHOD Sift dry ingredients into a mixing bowl Cut in shortening with a pasty blender or two knives until the mixture has the appearance of fine crumbs Add milk, a small portion at a time to the dry mixture stirring with a fork or spoon until the dough forms a ball around the spoon Turn dough out onto a lightly floured board and knead gently 10 times Pat or roll out dough to 1.5-2 cm thick. Cut with a floured cookie cutter with even pressure. Let stand on an ungreased baking sheet for 10 minutes before baking Bake at 350 for 15-20 minutes depending on the size of biscuits, or until tops lightly brown. Cool on rack and enjoy.

  8. SOFT DINNER ROLLS

  9. INGREDIENTS  cup (240ml) whole milk 2 and 1/4 teaspoons Yeast 2 Tablespoons granulated sugar, divided 1 large egg 1/4 cup (60g) unsalted butter, softened 1 teaspoon salt 3 cups (390g) all-purpose flour or bread flour*

  10. METHOD Whisk the warm milk, yeast, and sugar together in a bowl. Cover and allow to sit for 5 minutes. Mix the dough together with a large wooden spoon/rubber spatula/hand mixer. Add the remaining sugar, egg, butter, salt, and 1 cup flour. mix/beat for a minute, scrape down the sides of the bowl with a rubber spatula, then add the remaining flour. Beat until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. The dough should be soft and a little sticky. Knead by hand on a lightly floured surface for 3 full minutes. Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with plastic wrap to allow the dough to rise for 1-2 hrs. Grease baking pan. When the dough is ready, punch it down to release the air. Divide the dough into 14-16 equal pieces. Shape each piece into smooth balls. Arrange in prepared baking pan. Cover shaped rolls with plastic wrap. Allow to rise until puffy, about 1 hour. Preheat oven to 350°F (177°C). Bake for 20-25 minutes or until golden brown on top, rotating the pan halfway through. Remove from the oven, brush with optional honey butter topping, and allow rolls to cool for a few minutes before serving.
