  4. What Happened to the Mexican Pizza? • Taco Bell announced that it is parting ways with its Mexican Pizza, In November 2020. This news was not taken lightly. The menu staple had been around since 1986 when it was first introduced as Pizzazz Pizza & customers were devastated to see it go. They took social media to air their eventual grievances, and a Change.org petition was made to keep the Mexican Pizza on Bell’s menu. • The most devoted fan base rallied over 170000 signs on the petition, yet we still said goodbye to the Mexican Pizza. But Taco Bell listened to its dedicated fan base and brought it back on May 19, 2022. However, Pizza Mexican began to sell out across the country & demand ended up being seven times what was anticipated. The planned six-month was cut down to just two months. That is when Taco Bell realized fans were serious about their Mexican Pizza.

  5. It’s Coming Back to Taco Bell Again • Well, the fans have spoken & once again, Taco Bell has listened. The chain just announced that we could expect the return of the beloved Mexican Pizza on September 15. This time, it will be back on the menu permanently, and they even hinted that other discontinued items might be arriving again. • While we can hardly wait, we will try to satisfy Taco Bell cravings with our second-string options, like the Beefy Potato Riot & a Pineapple Whip Freeze, and we might even try to whip up a homemade Pizza Mexican.

  6. Ingredient Checklist • ⅓ cup mesa corn flour, optional • 12 (6-in.) thin flour tortillas • Two tablespoons of vegetable oil and divided • ½ cup taco sauce • ¼ cup red enchilada sauce • ¾ cup pre-shredded mozzarella cheese • ¾ cup pre-shredded Mexican cheese blend • One ¼ cup of refried beans, heated through • ½ cup sliced black olives • ½ cup finely diced tomato • ¾ cup cooked ground beef (seasoned with Taco Bell seasoning mix)

  7. Directions • Take a small nonstick skillet over medium flame. If using corn flour, lightly dredge one tortilla at a time in corn flour & dust off any excess. • Add 1/2 teaspoon of the oil to the skillet & add a tortilla, cook, often turning, until lightly golden & crisp, about 5 minutes. Set aside on a metal rack or paper towels. Repeat with remaining tortillas. • Stir together taco sauce & enchilada sauce in a small bowl; combine cheeses in another bowl and set aside. • Preheat the oven to broil. Spread about three tablespoons of beans on one tortilla, and add about two tablespoons of taco meat. Top with a second tortilla. Spread two tablespoons of sauce mixture evenly over the top tortilla & sprinkle with 1/4 cup of the cheese. Top with one tablespoon each of tomatoes & olives. Place on a rimmed baking sheet. The repeat building process with the remaining ingredients to make six pizzas. Place the baking sheet and broil for 1 to 2 minutes until the cheese is melted. Let stand for 4 minutes before cutting into quarters.

  8. OPTIONAL TOPPINGS • Diced Tomatoes were a standard topping on this tortilla pizza when ordered at the drive-through. • Sliced Green Onion: Chopped green onions add a crisp, peppery, slightly spicy flavor to the dish. These are optional. • Sliced Black Olives: Black olives are mostly available on enchiladas and other Tex-Mex dishes. They would taste great here as well! • Diced White Onion: It is best to use white onions sparingly when they’re raw, as they have a strong flavor and a great crunch, making them a perfect topping. • Shredded Iceberg Lettuce: juicy, Crisp, and mildly sweet, and use it as a topping to give the dish a dose of freshness. • STORING and REHEATING • You can make the meat in advance, and it will be even better the day after as it sits in the fridge, infused with seasonings. • Store the meat in an airtight container for up to four or five days once it has been chilled, and wait to assemble the pizza until you are ready to eat it. Tortillas will usually get soggy in the fridge.

  9. FREEZING • We can freeze the seasoned ground beef quickly. Seasoned meat can be kept in the freezer for up to three months in an airtight container. • Defrost frozen meat in the fridge overnight. Again, please wait until you’re ready to eat the pizza before putting it together. I don’t recommend freezing it once it is assembled. • If you have already assembled yours and want to hear it, use the oven. Depending on how crunchy & crispy you want it to be, it takes 5-10 minutes to reheat leftover pizza Mexican at 350°F (175°C).
