Overview • High Pressure Processing (HPP), Pascalization or Bridgmanization is a cold pasteurization or non-thermal technique for preserving and sterilizing packaged food, in which a product is processed under very high pressure. • This process leads to the inactivation of certain microorganisms such as gram-negative bacteria, molds and yeasts; the most resistant bacterial spores and enzymes in the food. • How HPP technology works? Products, already sealed in its final package, are introduced into a vessel and subjected to a high level of isostatic pressure (300 to 600MPa/43,500 to 87,000psi) transmitted by water. • Major HPP applications include: Ready-to-eat whole muscle and sliced meats, Processed fruits and vegetables, Fresh juices and smoothies, Deli salads and dips and Shellfish shucking & meat retrieval.
