  3. INTRODUCTION GREEN BOILED FRY The Indians have always amazed the world with their cooking style. Their combination of flavors is beyond comparison as the mix of spices and herbs is quite incredible. There was a time when cooking an egg meant boiling it or making an omelet. Then came the French toast and the journey of egg-based dishes moved forward rapidly thereafter. 1 LAPETI 2 Today, there are innumerable ways of making an egg. Remember, do not confuse egg-based dishes with non-veg dishes. Yes, there are many non-veg platters that use eggs as an ingredient but this article is about delicacies made with eggs as the main ingredient. The Indians have progressed well in this arena, with major work done by the Gujaratis. SURTI GOTALO 3 They have truly revolutionized eggs as a meal. It has reached a point where Surat, a diamond and textile city, is known for its stunning egg culture rather than the precious cuts and clothes. Here are the five dishes that we would be venturing into as we proceed. EGG CURRY 4 These are loved by most of the Indians and are also admired by people abroad for the palatable flavors used. The Indian street food is truly awe-inspiring as the makers are not actually qualified chefs but day-to-day people who understand the specifics of seasonings. They recognize the soul of each ingredient and ensure that the mix comes out tasting heavenly. ANDA PULAV 5 Let’s dive into recipes!
