WHY IS A5 WAGYU SO GREAT? Although A5 wagyu is the highest wagyu grade, there is one more area of grading that distinguishes the best from the really mind- blowing. There is further grading within the marbling category based on the Beef Marble Score (BMS). The BMS permits the specific marbling of the beef to be rated to an even finer degree of accuracy, and it is assigned a number grade ranging from 1 to 12. This demonstrates how crucial marbling, known in Japanese as'sashi,' is to the flavour of wagyu and the overall experience of eating high- grade Japanese beef.
The grading of wagyu marbling is as follows: Grade BMS No. 5: Excellent 8 – 12 4: Good 5 – 7 3: Average 3 – 4 2: Below average 2 1: Poor 1 GRADE OF QUALITY The grade of Wagyu beef is assessed by analysing four key categories: marbling (thin strips or flecks of fat); colour and brightness of the beef; hardness and texture; and the colour, lustre, and quality of the fat Each category of beef is assigned a number grade ranging from 1 to 5. 5: Outstanding 4: Good 3: Standard 2: Poor performance 1: Poor Taking the highest score from each category, the finest wagyu grade possible is A5.
