  3. USDA Definitions • A food component is one of the three food groups that comprise reimbursable breakfasts. These are grains (with optional meat/meat alternate allowed); fruit/vegetable; and milk. • A food item is a specific food offered within the three food components. For the purposes of OVS, a school must offer at least four food items and students must select at least three food items.

  4. Grains • Minimum daily requirement is 1 oz eq for all grade groups. • Minimum weekly offerings vary by age-grade group: • K-5: 7 oz eq • 6-8: 8 oz eq • K-8: 8 oz eq • 9-12: 9 oz eq • K-12: 9 oz eq • Half of grains offered must be whole grain-rich.

  5. Meat/Meat Alternate (Optional) • There is no requirement to offer m/ma in the new SBP meal pattern. • Schools may offer a m/ma in place of part of the grains component after the minimum daily grains requirement is offered in the planned menu. • A serving of 1 oz eq m/ma may credit as 1 oz eq of grains. • Or a school may offer a m/ma as an EXTRA food and not credit it toward any component. • Extra m/ma must fit within weekly dietary specifications (calories, saturated and trans fats, and eventually sodium).

  6. Fruit/Juice/Vegetable • In SY 2013-14, there is no change to this component. • ½ cup of fruit and/or vegetables must be offered to all age-grade groups. • Vegetables and fruit may be offered interchangeably. • There are no vegetable subgroup requirements. • There are no limitations on juice. • Students are not required to take a fruit or vegetable for OVS.

  7. Fluid Milk • Schools must offer only fat-free (unflavored or flavored) or low-fat (unflavored) milk. • At least 1 cup of milk must be offered daily for all age-grade groups. • A variety of milk (at least two options) must be offered.

  8. Future Guidance • Aspects of the SBP are being phased-in over multiple years. • The information in this presentation is for the 2013-14 SY only. • Additional guidance regarding further requirements for the 2014-15 SY and beyond will be provided in future trainings.
