Summarize • Place macromolecule lab on page 23R • Summarize lab in paragraph format—include the following: • Name the 3 nutrients tested. • Discuss which tests were used to test for monosaccharides (simple sugar), disaccharide, polysaccharide, protein and lipids • Discuss how you knew if a substance was positive for benedict, lugol, biuret and Sudan • Give a food example for monosaccharide, disaccharide, polysaccharide, protein and lipid

  3. Background Information • Enzymes are catalyst -proteins that lower the activation energy —increases chemical reactions • Activation Energy- energy needed to start chemical reaction

  4. Potatoes!!! • Enzyme in potatoes and liver = Catalase • Catalase breaks down and removes hydrogen peroxide from cells • Changes hydrogen peroxide to WATER and OXYGEN

  5. pH/Temperature—KILLER!! • Shape of enzyme (protein) determines function (job) • pH and temperature denatures (changes shape) of enzyme---killing it!!! • Enzymes LOVE normal body temperature and neutral (7) pH
