  1. Delectable and Flaky Kachori Kachori is a tasty and savoury food that is well-liked throughout India. It is made of wheat flour dough and filled with a spicy and sour concoction of lentils, peas, and spices. Typically, kachori is deep-fried, giving it a flaky outer and savory stuffing. For the dough: ● 2 cups all-purpose flour ● 1/2 teaspoon salt ● 1/4 cup ghee or oil ● Water as needed For the filling: ● 1 cup yellow split peas ● 2 teaspoons fennel seeds ● 1 teaspoon cumin seeds ● 1/2 teaspoon coriander powder ● 1/2 teaspoon red chili powder ● 1/2 teaspoon turmeric powder ● 1/4 teaspoon asafoetida ● Salt to taste ● Oil for deep frying For the green chutney: ● 1 cup fresh coriander leaves ● 1/2 cup fresh mint leaves ● 2-3 green chilies ● 1/2 teaspoon salt ● 1 teaspoon sugar ● 1 tablespoon lemon juice Method: 1. Rinse the chana dal thoroughly and soak it in water for 2–3 hours. Drain the water and grind the dal coarsely in a mixer grinder. 2. Turn off the flame and let the dal mixture cool down. 4. In a mixing bowl, add all-purpose flour, salt, and ghee. Mix well. Gradually add water and knead the dough until it becomes soft and pliable. 5. Divide the dough into equal-sized balls. Take a ball and roll it out into a small circle. Place a spoonful of the dal mixture in the centre of the circle. 6. Bring the edges of the circle together and seal the kachoris. Repeat the process with the remaining dough balls. 7. Heat oil in a deep frying pan over medium heat. 8. Fry the kachori until golden brown on both sides. Remove from the oil and place on a paper towel to absorb excess oil. 9. To make the green chutney, blend coriander leaves, mint leaves, green chilies, salt, sugar, and lemon juice in a mixer grinder. Serve hot kachoris with green chutney.
