  1. STD 1 2 3 4 5 6 7 8 Mw (kDa) 250 150 Whey protein region 1 100 75 Casein region 50 37 Whey protein region 2 25 20 15 10 Supplementary Figure 6. Image of SDS-PAGE gel (4% to 15% acrylamide gel) of whey proteins obtained from milk and yoghurt samples (STD: standard molecular weight; lane 1, 2: whey from fortified bovine yoghurt; lane 3, 4: whey from buffalo yoghurt; lane 5, 6: fortified bovine milk serum; lane 7, 8: buffalo milk serum). Whey protein region 1 is expected to contain serum albumin (66.4 kDa), lactoferrin (78.1 kDa) and an unidentified protein. Whey protein region 2 contains - lactalbumin (14.2 kDa) and - lactoglobulin (18.3 kDa). The casein regions contains s1-CN (24.5 kDa) , s2-CN (26.2 kDa), - CN (25.1 kDa) and -CN (21.3 kDa). The identities of the proteins are based on the molecular weight.
