  3. What is soil? A mixture of sand, silt and clay that supports the growth of plants.

  4. What are stabilizers? This is added to food to keep oil based and water based substances from separating.

  5. What is monosodium glutamate (MSG)? This is added to enhance flavor.It stimulates glutamate receptors in the tongue.

  6. What are preservatives? Substances added to lengthenthe time before food spoils.

  7. What is clay? This component of soil binds nutrients, retards the flow of water, and makes heavy soils.

  8. What are vitamins? Added to food to preventBeri-Beri, Scurvy, Pellagra, and Rickets

  9. What are common antioxidants added to food? BHT and BHA

  11. What is fertilizer? Contains nitrogen, potassium and phosphorus in various percentages.

  12. What are artificial sweeteners? Substances that are notsugars but they are sweet.

  14. What is porosity? The size of the spaces thatoccur in soil.

  15. What is a residual soil? This kind of soil forms fromparent material deep underground.

  16. What is EDTA (Ethylene Diamine Tetraacetic Acid)? This is added to food tocapture metal ions that would catalyze oxidation.

  17. What is HFCS (High Fructose Corn Syrup)? A sweetener, not glucose, made from corn.

  18. What is a humectant? This type additive keeps food moist. One example is sorbitol.

  19. What are soil horizons? The layers that soil develops over time.

  20. What are the first food additives? Pickling with vinegar, salting, sulfur dioxide in wine.

  21. What is an anti-caking agent? This type of additive, e.g. sodium aluminosilicate, is added to keep food dry and free flowing.

  22. What is GRAS (generally recognized as safe)? This is a designation given by the Food and Drug Administrationwhen scientific evidence existsthat a food additive is safe.
