Thesecultivarsconsistof25Frantoio,25Leccino,10Mission,25Coratina,5Pendolino,and 10Picholine, allofwhichwereoriginallyplantedin2194inaCarmel Valleyorchard thenreplantedatHolmanRanchin2007.Thesematureolivetreesallowed us toproduceoliveoil rightaway.Theyareplanted inshaleforthebest productionand harvestingresultspossible.Weharvest ourfruit byhand inDecember,whichisthenmilled,producing asuperb,highquality product.Althoughthe OliveGroveisnotcertified organic,wedoemployorganicpracticeswhenfarming ourtrees.Ourmill,however,iscertified organic.Aninteresting factisthatolivetreesare alternatebearing,whichmeansthat oneyear theymayproduce650,375ml bottlesworthofoil, whilenext year theymay produce only50,375ml bottles.
