  1. Proteases Market Overview: Global Proteases Market was worth USD 1.58 billion in 2016 and estimated to be growing at a CAGR of 6.15%, to reach USD 2.13 billion by 2021. Proteases are any enzymes which perform proteolysis; protein catabolism via hydrolysis of peptide bonds. Proteases have undergone multiple evolutions, and various classes of protease can execute the same reaction by totally different catalytic mechanisms. Proteases are found in Plantae, Fungi, Animalia, Bacteria, Archaea and viruses. There are various types of proteases that are different on their source type, a few of which include papain, ficain, asclepian, clostripain etc. The protease mechanisms include metalloproteases, glutamic acid proteases, serine proteases, cysteine proteases etc. Generally, proteases from bacterial and fungal sources are changed genetically by transfer of a few genes or by deletion to enhance their performance. Hence, genetically modified proteases result in increased catalytic stability, activities, modified pH and temperature levels. Proteases are used in food applications. In dairy it helps in coagulation of milk, flavour modification while in a bakery it intensifies gluten development.
