  1. FLEUR DE CANNE The aromas of mature sugar cane A new vintage White Rum distinguishing itself by its aromas of " cane flower ". An accurate and requiring work was implemented(operated) by the cup in the bottling to obtain this unique product. Sugar cane was collected in May during the driest period to hold only the aromas of mature sugar cane (notes of vesou, honey, blossom of orange tree and pineapple jam, hammers) without the vegetable part. These delicate aromas were maintained during the fermentation and during the distillation thanks to a rigorous know-how supported by numerous tastings. A long period of preparation refined the product, in particular the slow reactions of estérification, to obtain a round agricultural white rum. 70Cl 50% Vol Available now

  2. CUVEE 1765 A tribute to Saint James Tribute to the creation of the Saint James brand, the Vintage 1765 is a subtle assembly of rums strictly selected and aged in small oak barrels.   3. HORS D’AGE The most refined of old rums. A blend of rums between 6 and 10 year old Over two centuries of experience and tradition are behind the subtle blending of carefully selected old rums. This rum spends between 6 and 10 years in oak casks of 180 litres capacity and is observed, checked and adjusted on a permanent basis by our cellar master. It reaches a level of perfection never equalled before. The tasting: NOSE: Predominantly woody with notes of cigar cellar & bracken Fruity notes: liqueur brandy fruit (prune), indicating long ageing in casks Notes of roasting (coffee, cocoa, moka,…) from the quality of the oak PALATE: Mellow, slightly sweet & heady initial taste Same range as present on the nose between fruitiness (prune, fig,…), roasting (moka, cocoa…), woodiness and spices (cinnamon, nutmeg) Light notes of Rancio (typical of old Port) & Virginia tobacco (cigars) enhanced by airing in the mouth Exceptional length on the palate while retaining its aromatic complexity which slowly fades away 70Cl 43% Vol 6-10 YO Available now

SAINT JAMES 7, 12, 15YO The Trilogy The long ageing of St James rums in small barrels and of varying degrees of alcohol allows the rum to be specially extracted so they evolve over time and the slow gradual penetration of the rum within the staves so necessary for extraction. Over the years, the angel’s share takes away less and less alcohol with a finer extraction and increased concentration, so after seven years 35% evaporates from the initial volume in the barrels compared to 52% after 12 years and 60% after 15 years. The spicy notes evolve from cinnamon to nutmeg and West Indian bay tree, while at the same time the fruit becomes gradually sweeter and more stewed (prunes). The charred barrels bring sweet roasted notes (mocha) that become more toasted over time. The aromatic intensity is confirmed on the finish provided by the woody character, whose notes develop from the undergrowth to drier, more dominant aromas of fern and boxwood. The trilogy of St James old rums from 7 to 15 years (youngest aged rum for each category) is an opportunity to follow this aromatic development obtained through time-honoured methods and a great deal of patience.   5. SAINT JAMES 7YO 7 years-old The product: A rum aged for a minimum of 7 years showing great aromatic richness. Tasting: Color :Crystal-clear, coppery-cashew Nose :A first nose of sweet spices (cinnamon with a vanilla undertone) blended with dominant dried and candied fruits. Mouth :Roasted notes typical of St James, here sweet mocha notes on a woody base (fern). Final :The tannins give this 7-year-old rum length and flavours finishing on a warm note. • Product benefits: • A blend of rums aged for a minimum of 7 years. • Aged in carefully-selected small oak barrels. • Creates a range with the 12 and 15 year old rums which together offer an interesting tasting experience of distinctive flavours by age. • Modern, elegant and high-spec presentation.   6. SAINT JAMES 12YO 12 years-old The product: A rum aged for a minimum of 12 years to produce a rich and complex rum. Tasting: Color:Crystal-clear, coppery-cashew Nose:This 12-year-old rum opens onto a predominantly woody nose with tannins melted during the time in contact with the barrel which concentrates the rum for greater aromatic intensity. Mouth :The notes of undergrowth and roasting (coffee, toast) is accompanied by more pronounced spices like nutmeg, gradually making way for smoother notes of cinnamon and prunes.   7. SAINT JAMES 15YO 15 years-old The product:Aged exceptionally for 15 years for a high-end tasting experience. Tasting:Color :Crystal-clear, coppery-cashew Nose :The woody notes (mushrooms, dry wood) are combined with roasted notes (charred wood – grilled/toasted notes) created from the charring of the barrels. Mouth :This is discreetly followed on the palate by notes of nutmeg and fruit in brandy. On the palate, the tannins and wood dominate with dry/charred wood notes that pleasantly coat the mouth.
