  2. Knife Skills Practice • How to Cut a Potato • “Large Sticks” become Medium Dice (1/2 inch square) • Batonette become Small Dice (1/4 inch square) • Julienne become Brunoise (1/8 inch square)

Your Turn - • Wash your potato in cool running water. • Use a chef’s knife to practice these cuts: • Large Sticks > Medium Dice (1/2 inch square) • Batonette > Small Dice (1/4 inch square) • Julienne > Brunoise (1/8 inch square) PLANKS > STICKS > SQUARES • SAVE ALL SCRAPS!!! • Combine like cuts after individual assessment.
