Seven Principles of HACCP • Conduct hazard analysis and identify preventive measures • Identify critical control points (CCP) • Establish control measures • Monitor each CCP • Establish Corrective action to be taken when a critical limit deviation occurs • Establish a record-keeping system • Establish verification procedures

  5. HACCP Training Workshops • We recognized that it was in everyone’s best interest to train tribal fishers in HAACP • Michigan Sea Grant coordinated 7 on reservation tribal workshops which trained 191 fish processors • Three Indian Tribes have signed memorandums of understanding with the FDA to implement HACCP on their reservations

  6. HACCP Implementation • All major fish processing plants in Michigan now running under HACCP • As a follow up Michigan Sea Grant Extension assisted these facilities in developing HACCP plans and record keeping systems • HACCP has helped insure a safer product reaches the consumer
