Holding /Serving/Catering/Dining/Transportation Hot and Cold Holding of Foods All potentially hazardous foods, except those prepared for immediate consumption, shall be maintained in such a fashion as to prevent the growth or development of bacteria. When holding foods for service, such as on a buffet line, always remember to keep hot foods hot and cold foods cold. Hot-holding equipment must be able to keep foods at a temperature of 60⁰ C or higher, and cold-holding equipment must be capable of keeping foods at a temperature of 5⁰ C or colder. Hot-Holding Guidelines When holding hot foods for service, observe the following: 1. Stir the food at regular intervals, as it will help distribute heat evenly throughout the food. • Keep the food covered as covering will help retain heat and eliminate potential contaminates from falling into the food. • Use a food thermometer to measure the food’s internal temperature every two hours. • Discard any hot food after four hours if it has not been maintained at a temperature of 60⁰ C or higher. • Never using hot-holding equipment to reheat foods. Foods to be reheated should first be heated to an internal temperature of 60⁰ C and then transferred to the hot-holding equipment. • Never mix freshly prepared food with foods being held for service as this practice can result in contaminated foods. .

Holding /Serving/Catering/Dining/Transportation Hot and Cold Holding of Foods Cold-Holding Guidelines When holding cold foods for service, observe the following: • Protect all foods from possible contamination by covering them or using food shields. • Use a food thermometer to measure the food’s internal temperature every two hours, and take corrective action whenever the temperature of a cold food item goes above 5⁰ C . 3. Never store food items directly on ice. All food items, with certain exceptions, should be placed in pans or on plates when displayed. Ice used on a display should be self-draining, and all pans and plates should be sanitized after each use.

Holding /Serving/Catering/Dining/Transportation Food Packaging • It shall conform to all the Regulations and standards laid down under the Food Safety & Standard Act, 2006. • For primary packaging, only Food grade packaging materials are to be used . • Packaging materials or gases where used, shall be non-toxic • It shall not pose a threat to the safety and suitability of food.

Holding /Serving/Catering/Dining/Transportation Food Contact Material Food contact material includes, all material which directly comes in contact with food like – • Primary Food Packaging Material. • Utensils, spoons, scoops etc. • Equipments & containers. • Chopping boards. • Cutting tools • Cling films used to cover foods. • Conveyor belts • others. Precaution for food contact material Food contact material shall be- • Food grade • Devoid of contamination from physical, chemical & biological hazard.

Holding /Serving/Catering/Dining/Transportation Food Distribution / Service • All critical links in the supply chain need to be identified and provided for to minimize food spoilage during transportation. • Processed / packaged and / or ready-to-eat food shall be protected as per the required storage conditions during transportation and / or service. • Temperatures and humidity which are necessary for sustaining food safety and quality shall be maintained. • The conveyances and /or containers shall be designed, constructed and maintained in such manner that they can effectively maintain the requisite temperature, humidity, atmosphere and other conditions necessary to protect food. • Conveyances and / or containers used for transporting / serving foodstuffs shall be non toxic, kept clean and maintained in good condition in order to protect foodstuffs from any contamination.

Holding /Serving/Catering/Dining/Transportation Transportation and Handling of Food • The vehicle/transportation being used to carry cooked/prepared/processed food should be clean and, dedicated for this purpose and should not carry anything else. • Time required for transportation should be minimum, to avoid microbial proliferation. • Cooked food served hot should be kept at a temperature of at least 60⁰ C to prevent microbial growth. • Cooked food to be served cold should be kept below 5⁰ C to prevent growth of pathogens. • All foods during transportation must be kept covered and in such a way as to limit pathogen growth (intend include dust, dirt) or toxin formation by controlling time of transportation, exposure, temperature control and using safe water for cleaning etc.

It should be ensured that utensils, crockery, cutlery and specially hands of the food handlers/seller are clean and sanitized.
