  2. How Did This Happen? • Our location makes un an ideal lunch venue for students and hospital staff • Our organic and vegetarian specialties have become popular alternatives to fast food • Our reputation for good, inexpensive meals has spread throughout the community

  3. Today’s Situation • Harriet’s Place is currently experiencing a “lunch crunch” • Customers are waiting too long for tables • The wait staff is overburdened • How can we improve lunch operations?

  4. Available Options • Increase space in the dining room by building out into patio area • Hire additional wait staff for lunch service • Market and improve carryout service for customers who just want the food fast • Enlarging the dining room could make it possible for us to open Harriet’s Place for dinner as well as breakfast and lunch
