  2. Inleiding • Naamgeving: glycyrrhiza glabra, zoethoutwortel, liquorice • Glukos: zoet • Riza: wortel • Glabra: haarloos • Beschrijving • Winterharde vaste plant • Familie: fabaceae of vlinderbloemigen • Paars-blauwe bloemen • Dikke houtachtige wortels: leveranciers van ‘kruid’

  3. Samenstelling • Triterpenoïde saponinen: glycyrrhizine(zuur) • Mengsel van K+, Ca2+ en Mg+ zouten van glycyrrhizinezuur • Zoetstof: 30 – 50 keer hogere zoetkracht dan suiker • Hittebestendig: voordeel tov aspartaam • Iso-flavonen: fyto-oestrogenen • Anti-oxidanten • Oestrogeen activiteit
