  2. Ingredients for the filling 2 kg flaouna cheese and halloumi 1 piece yeast, the size of 2-3 large eggs 12 eggs 1 glass semolina or flour 1 glass raisins (optional) ½ teaspoon mehlebi ½ teaspoon mastic Fresh mint, finely chopped 2 teaspoons baking powder

  3. Ingredients for the dough 2 kg plain flour 4 eggs 1 teaspoon salt 3 teaspoons baking powder 2 glasses of spry butter 1 piece yeast, the size of 2-3 eggs Mehlebi, mastic and aniseed lukewarm milk and water 2 glasses of sesame seeds 2 beaten eggs

  4. Step 1 – preparing the filling The filling must be prepared 4-5 hours before. The filling is made of eggs, special flaouna cheese, halloumi and yeast. We add the mint, mehlebi, mastic and raisins if we want to. The next morning we add the baking powder and the mint.

  5. Step 2 - preparing the dough Mix the flour, baking powder, mastic, the mehlebi and aniseed with1 teaspoon salt. Add the butter and rub into the flour Add the eggs and milk to make a rather fluffy dough adding as much water as is necessary.

  6. Step 3 – adding the filling to the dough Prepare the dough and leave it for 1-2 hours. Roll the dough into thin round pieces. Put the dough onto the sesame seeds. Press well so the sesame can stick to the bottom side of the dough. Add a scoop of the filling. Create the shape you want.

  7. Final step – ready to cook! Rub the beaten egg and more sesame onto the flaouna Bake in a pre-heated oven (180 degrees Celsius)
