  2. Darina Allen • Darina Allen is a household name in Irish cooking. • Darina is the owner of Ballymaloe cookery school in Shanagary , Co. Cork , as well as being a teacher, newspaper columist, cookbook author and Television presenter. • She is part of the Allen family – Ireland’s most famous cooking dynasty. • I Picked Darinaallen because I was intrested in the Allen family and the background to darina’s company.

They have been running classes in Ballymaloe Cookery School since 1983 • They started the school because Darinawas a chef and her husband, was a farmer and they wanted to run something from home. • Darina is known for leading the slow food movement in Ireland. • Through a combination of talent and trial and some error, Darinabecame a good cook.  She began to establish a reputation for it and was eventually encouraged to set up what would become a world-famous restaurant in her home“

  4. How it started • It all started in 1932 when Ivan, aged 17, came to help Wilson Strangman to run his farm at Shanagarry. Times were hard but he and Ivan diversified their production brilliantly into alternative crops. These were and still are the basis of our cuisine. • In 1943, in wartime, large quantities of tomatoes, mushrooms, cucumbers and apples were being exported from the farm to England and Wales. The surplus came into my kitchen along with cream, butter and eggs and slowly I learnt how to cook with them, guided by Myrtle’s husband. • They expanded into mixed farming and brought up their six children. Myrtle started a restaurant which developed into a hotel. Now, with 22 grandchildren and 15 great grandchildren, many new family enterprises have developed.

  5. The company behind Ballymaloe House, the country house hotel and restaurant run by the Allen family, incurred a loss of €43,945 last year, down from just over €111,000 the previous year. • The company had retained profits of €2.3 million at year end.

Characteristics of Darina • Darina Allen (born 1951 in Cullohill) is an Irish chef, food writer, TV personality and founder of Ballymaloe Cookery Schoolin Shanagarry County Cork, Ireland • She is a leader of the Slow Food movement in Ireland and instrumental in establishing a network of farmers' markets in the Cork area. • she is the author of several successful books on the topic of Irish cuisine • She has been voted Cooking Teacher of the Year by the International Association of Culinary Professionals. • Darina graduated with a degree in Hotel Management from the Dublin Institute of Technology and is a Member of Taste Council of Irish Food Board.
