Background Information

Botulism is caused by the bacteria Clostridium botulinum. This Gram-positive bacterium persists as unique slightly curved club shaped rods which do not associate with each other in any patterns. C. botulinumare motile anaerobic bacteria

Symptoms of botulism include double vision, drooping eyelids, slurred speech, difficulty swallowing, dry mouth, muscle paralysis, abdominal cramps and often constipation. These symptoms are brought on my neurotoxins produced by C. botulinum. There are seven types of botulism neurotoxin designated by the letters A through G. Only A,B, E, and F neurotoxin types produce symptoms in humans. Each toxin produces a polypeptide of 150kDA which is activated by proteases found in the stomach

Transmission

“Botulism” comes from the Latin “botulus,” meaning sausage. When botulism was first recognized in Europe, many cases were caused by home-fermented sausages.
