1. Fish Out of Water: a Recipe The Gulf Coast of Texas is a popular place to take part in a wide variety of activities and adventures. The variety of fish located in the freshwater reservoirs, lakes, streams, saltwater bays, and the Gulf of Mexico itself is a major draw for recreational and professional anglers. Types of fish in the area include everything from flounder to redfish, black drum, speckled trout, and more. Here is a recipe you might try if you reel in some of the local area’s most well-known fish varieties, red snapper. WHOLE RED SNAPPER ON THE GRILL 1 whole red snapper (3 lb) 3 oranges, zested and juiced 2 limes, juiced 3 tbsp extra virgin olive oil 1 tbsp cumin ½-1 tbsp brown sugar 4-6 cloves garlic, minced 1 chile pepper, deseeded and thinly sliced (optional) Salt and black pepper, to taste ¼-½ c cilantro, coarsely chopped Directions  Prepare the grill by preheating it over medium-high heat until the temperature reaches approximately 450°F. Oil the grill grates or place a nonstick grill mat onto the grill.  Prepare the fish. After cleaning, descaling, and gutting the fish, dry it thoroughly with a paper towel inside and out. 2. knife, gently score the outside of the snapper (both sides) in a criss- cross pattern, using 1-inch intervals.  Make a sauce by combining the orange zest, orange and lime juice, olive oil, cumin, garlic, brown sugar, chile slices (optional), salt, and pepper; adjust to taste. Rub 3-4 tbsp into the fish, especially into the score marks.  Grill the fish over medium-high heat for about 15 minutes; flip it halfway through that time. Then remove it from the grill and allow it to rest. Top the snapper with the sauce and as much fresh cilantro as is preferred. Serve with extra orange wedges (optional).
