  2. How do they work? • Food in a microwave is cooked by microwaves (a form of electromagnetic energy) • Microwaves are generated by a magnetron tube • A stirrer fan distributes the microwaves throughout the oven

  3. How do they work? • Oven walls, floor and door are made of metal which reflects the energy to cook the food • Microwaves penetrate food from the top and all sides

  4. How do they work? • Food is cooked from outside into the middle • Unlike conventional oven, food in a microwave is not cooked by heat around it but by the heat generated by the food • Microwaves penetrate food to a depth of up to two inches • Within the food the molecules begin to vibrate • Vibration causes friction which creates heat

Hints for good microwaving! • Foods arranged in ring with open center cook more evenly – microwaves strike from all angles so if center is left open can hit from all sides! • Food density should be uniform – same thickness • Rotate foods because ovens have “hot spots” • Foods continue to cook after removed – allow “standing time” because food molecules are still vibrating

  6. Hints for good microwaving… • Leave space for steam to escape…tight fitting lids/covers will cause food to burst! (eggs in the shell are BAD!)

  7. Materials you CAN use in MW… • Paper towels (without plastic or recycled paper) • Heatproof glass (casseroles, liquid measuring cups, etc.) • Special microwave cookware • Plastic containers IF labeled microwave safe • Plastic wrap – but BE CAREFUL – may melt if food fat content high

  8. Materials you CAN’T use….. • Recycled or brown paper – contains chemicals • Plastic containers from dairy foods, margarine, etc. • Wooden containers – dry out and might burn • Aluminum foil – EXCEPT for shielding • Metal cookware – microwaves bounce off and cause arcing (sparks which can damage oven)
