  4. Northern Flavor • Warmer feel • Less spicy but has Northeastern flavor. (Isaan) • In cold Mountains

  5. Central Flavor • Combinations of all other area flavors • Wide variety • The “real taste” of Thai food

  6. Northeastern • Extremely spicy • Rare fish from rivers • Rice, salads, grilled chicken, larb (minced pork salad)

  7. SouthernFlavor • Salty, Sour and Hot • Influenced by Chinese and Malay • Curries coconuts and chilies

  8. Flavors • Four Flavors • Salty • Sweet • Sour • Pungent (sometimes spicy)

  9. General Health • Healthy • Low-fat • High fiber

Recipe Crispy catfish green mango salad • 1/3 cup vegetable oil  • 3-5 Thai chili pepper, minced  • 1 teaspoon sugar  • 2 shallots, thinly sliced  • 1 lime 1/3cupgreen mango  • 2 tablespoons fish sauce  • ½ lb catfish  • ¼ cup cashew Fry fish then add ingredients as stated. Serve’s as an appetizer
