  2. ABOUT US Galatée has been a chief wine maker, consultant and wine critics for the past 15 years in France on the most famous French "terroir". Galatée's family has been making or selling wine in France since 1830. Her great grandfather developed a passion for the highest quality wines and since then, her family has remained at the forefront of developments in the wine world.

Vineyard age: 40 years. 45% vol. WINEMAKING After the pressing, the grapes ferment for 1 month in an airless environment. Slow distillation process in traditional stills and aging for over 20 years in oak casks. During the aging process, alternation between new and old oak barrels.

WINEMAKING The grapes are hand-picked when they have reached an optimal maturity. The wine is matured in barrels from the Cadus cooperatives in Burgundy for 6 to 15 months. They are only bottled when they have reached a polished stage.

Vineyard age: Syrah: 33 years, Grenache: 46 years. WINEMAKING Traditional maceration for 20 to 21 days, with daily reduction or pumping over, whole grape carbonic maceration for 15 days. The wine is aged in new oak barrels for 12 months.
