  2. Potato Salad Preparation Peel and boil the potatoes for about 20 minutes, drain and leave to cool. In a salad bowl - add the finely chopped onions, salt, pepper to taste, the lemon juice and olive oil. Cut the potatoes into cubes and add the the salad bowl. Gently mix. Sprinkle with parsley before serving. • Ingredients • 4 large potatoes, cut into cubesa pinch of salt crushed black pepper 2 onions (works even better with scallions)the juice of half lemon2 tbsp olive oilsome fresh parsley

Bob Chorba (Monastery Style) • Ingredients • 1 lb white beans2 carrots, finely chopped1/2 celery stalk1 onion 2 tomatoes, grated2 peppers, sliced1 chili pepper (optional)a pinch of parsley, a pinch of mint or oregano2 tbsp oil salt to taste Preparation Soak the beans in cold water for 3-4 hours, drain and pour fresh water. Boil in a pot together with oil, carrots, onion and celery. Boil until beans are soft, then add the peppers, tomatoes and mint. Add salt to taste and boil for another 15-20 min. Serve sprinkled with finely chopped parsley.

  4. Pork with Potatoes Preparation Put the meat in a pan, add the salt and oil, cover and cook at medium heat, stirring occasionally for about 15 minutes. Add the carrot and onion to the meat and stir. Add the celery and green pepper in about 5 minutes and stir. In another 5 min. add paprika, water and stir. As you probably have guessed it, stirring is important for this recipe. Cover and cook for 30 minutes. Add the potatoes and cook for another 15 minutes. Add the tomato sauce, parsley and stir. Cook for 5 minutes then turn off the heat and let the pan stay on it for another 10 minutes. Serve sprinkled with parsley.Note. If you cook chicken, reduce cooking time to 10 min. instead of 1/2 hour. • Ingredients • 1.5 lbs meat, cut into cubes (pork, beef or chicken) 1 yellow onion, chopped1 carrot, chopped1 stick celery, sliced1 Italian pepper, sliced1 tsp. paprika1 tsp. salt5 potatoes, cut into cubes1 can (6-8 oz.) tomato sauce2 tbsp. parsley2 cups hot water1/4 cup oil (optional)

  5. Lamb DrobSarma (Lamb Liver with Rice) Preparation Boil the meat in salt water for about 30 minutes. Cook the onions in the butter and some water for about 5 minutes, add the rice, meat, pepper and mint and cook for 5 more. Add 2 cups of the lamb stock and boil 20 minutes. Add the rice mixture and the meat in a cooking pan, put in the oven and bake 30 minutes at 375F. Beat the eggs with the yoghurt, pour over the lamb and rice and bake for another 10 min. • Ingredients • 2 lbs lamb liver, hearts, and kidneys, cut into cubes2 eggs, 1/2 cup rice, 2 bunches of scallions, finely chopped1 cup yoghurt, mint, pepper, 1/2 cup butter, salt.

  6. Baked Apples Preparation Core the apples. Mix butter and sugar, add walnuts and cinnamon. Fill the apples with the butter mixture. Put on a baking sheet inside the baking dish and sprinkle with some water. Bake on a 300F oven until soft. Serve with ice cream or vanilla syrup. • Ingredients • 4 apples, peeled 2 tbsp. butter, softened 1/2 cup brown sugar 1/4 cup walnuts, chopped a sprinkle of cinnamon
