  29. Tips for Making Your Dish POP! Garnish General Neatness Be sure and clean the edges of your dish. Whoever carries the dish needs to wear gloves. Keep your paper towels handy to wipe up spills. Keep sizes of portions on the smaller side rather than larger. • Use what you have. • Keep it simple – don’t overdo. • Think what to save out to garnish AHEAD of time. • Assign someone on the team to lead out on this.
