Gluten is found in foods such as bread, pastries, pizza dough, and cookies because it can improve the texture and sensory properties of foods whole-wheat foods. However, gluten can also be found in yogurts, salami, sauces, frozen potatoes, chocolate, sweets, and even food supplements. What's the Problem with Gluten? Being a protein, it must be digested and broken down into smaller fractions, also known as peptides, and some people have difficulties when digesting gluten; causing an adverse reaction, and damage or sensitivity. Gluten has undergone many genetic transformations. These changes in its structure may represent the difference between an immune response or none. Wheat is good, but these alterations are turning it into something bad for some people. At an energetic level, bread calms and tones the heart because it has a comforting nature, stimulates growth and body weight. But one must be aware and careful, especially if 1/3

  2. one is prone to mucus, obesity, or abnormal or tumor growths. People with arthritis should suppress gluten. What Is Celiac Disease? Celiac disease is an autoimmune genetic disease known for a permanent gluten intolerance. It produces atrophy of the intestine's villi, leading to poor absorption of nutrients. People who suffer from it usually present symptoms such as diarrhea, abdominal pain and bloating, weight loss, nutritional deficiencies, and irritability. How Is It Diagnosed? If celiac disease or gluten intolerance is suspected, a blood test will be done to detect antibodies or serological markers. The diagnosis is completed with a biopsy of the mucosa of the small intestine to detect possible atrophies in the villi. Once celiac disease has been diagnosed, treatment consists of removing all gluten-containing foods from the diet. For an accurate diagnosis, always resort to professionals. Is It the Same as Sensitivity? No. There are people with gluten sensitivity, and yet they are not celiac. These patients feel bad after consuming foods with gluten and show improvements after following a gluten- free diet. The symptoms presented are more diffuse: fatigue, joint pain, cramps, or weight loss and their diagnosis is more difficult. If that's your case and you want to check if you have gluten sensitivity, try to remove it from your diet to see if these symptoms disappear. If they do, try to consume gluten foods, and if a relapse happens, you'll get an idea about your sensitivity for this protein. If so, non-celiac gluten sensitivity is diagnosed and treatment is the same as in celiac disease. Gluten Allergy In this case, the symptoms appear abruptly when consuming a food with gluten, producing allergic reactions. The symptoms can range from abdominal pain, diarrhea, vomiting, hives to anaphylaxis Gluten is a protein that is part of cereals such as wheat, barley, rye, oats and one of its properties is the elasticity it gives to flours, which, with fermentation, helps the bread get volume. Gluten does the same in the intestine as in the oven; it behaves like a glue that often causes allergies and intolerances that in the long run can complicate function and structure of the intestines, liver, and the immune system. Alternatives Gluten is not an indispensable protein. For this reason, it's best to opt for foods that are gluten-free or that, if they do have it, its formulas are not as altered. For example, you can opt for rice, which, despite the attempts, is a cereal that is not easily "manipulated". Also, cereals like millet, buckwheat, and grains such as quinoa or amaranth can also be included in this diet. Lastly, when consuming gluten, it is better to opt for one that is organically produced with the highest quality standards. Oatmeal or spelled, although they have gluten, are not so manipulated for now. In addition, they have benefits that are important. In the case of oatmeal, it can strengthen the nervous system while spelled doesn't cause as much mucus.
