  2. Culinary II • Get ribs in oven • Begin prep for BBQ Sauce • Dice onion and bacon • Extra clean up

  4. Culinary I • Lab responsibilities • Recipes • Demo • Need 1 from each group to marinate pork

  5. Marinade 1 oz Cilantro, minced ¼ Serrano pepper, seeded, diced ½ lime (zest and juice)Lime, zest and juice 1 T. Olive oil 1 tsp. garlic, minced ½ Salt ¼ tsp. pepper 4 oz Pork Vegetables (assortment) 5-7 pieces each person

  6. Method • Cut the pork into large cubes • Place in the marinade for 30 minutes at room temperature • Place on water soaked skewers with cut vegetables • Grill till a minimum internal temperature of 145 degrees F. • Serve with cilantro rice

  7. Cilantro Rice 1 cup Rice 2 cups Water ½ lime (juice and zest) ¼ oz minced cilantro Salt & Pepper to taste • Combine the water and rice and bring to a boil • Lower to a light simmer • Add the lime and cilantro • cover and cook over stovetop for 10-12 minutes Turn off and let rest 10 more minutes
