Goals • To have an understanding of vocabulary and facts associated with chocolate. • To identify and explain the uses, storage and nutrient value of chocolate. • To successfully prepare, serve and sample truffles in kitchen teams. • To self-reflect and evaluate results of truffle preparation and challenges encountered.

  3. Pre-UDL • Content Representation and Choice were limited. • Demonstrate recipe. • One recipe for all students. • Assessment was traditional.

  4. Post-UDL • Technology is being incorporated • Students now have choice • Student engagement has increased

  5. Further Development of UDL • Access more background knowledge • Provide meaningful extensions of the lesson for my advanced students. • Students improve upon recipe by adding in images, tips/tricks/ facts, etc. • Create a cookbook for class recipes. • Build my database of UDL lessons
