  4. Fats • Although all fats are not created equal... • Many naturally occurring fats have a place in our diet when consumed in the proper balance.

  5. Chemical Terms • Omega 3, Omega 6, polyunsaturated, and saturated are terms that describes the chemical structure. • Fatty acid is just the term for a certain building blocks of fat, and fat then goes on to be a precursor to many important chemical in the body. • Essential fatty acid means this fatty acid is essential to our health and well being but it can not be made by the body. We must therefore get it from our diet.

Essential fatty acids • Polyunsaturated Omega 6’s • Safflower, corn and sunflower oils provide linoleic acid • Terrestrial animal oils provide arachadonic acid • Polyunsaturated Omega 3’s • vegetable sources flax and canola oils provide Linolenic acid • Marine sources provide eicosapentenoic acid (EPA) and docosahexenoic acid (DHA)

  8. The Eskimo paradox • Studies show Greenland Eskimos eat a high fat, high cholesterol diet somewhat similar to the Danes. • Yet some how they have much better cardiovascular health. (Lancet 2:433-435,1979 and Am J Clin Nutr 33:2657-2661, 1980) • It is believed the high degree of Omega 3’s in their diet plays an important role.* * These statements have not been evaluated by the Food and Drug Administration. Other Studies • The Zutphen study monitored 852 middle-aged men who had a history of good cardiovascular health for 20 years. • Those who consumed a little more than 2 fish meals (fatty type fish) a week had a 50% lower risk of cardiovascular health problems. • Many follow-up studies using both epidemiology studies and diet controlled studies followed. • Most showed a diet with as few as 1-2 fish (fatty type) meals a week had a significant reduction in the risk of cardiovascular health problems.(Am J Clin Nutr 65:1083-1086, 1997)

  10. Benefits of the fish oils • Studies indicate the fatty acids from fish reduce the triglycerides in the blood (although they have minimal or no effect on other lipids)
