  1. Food preservation • Killing the microorganisms in food. • Stopping their growth.

  2. Refrigeration (Freezing) • Low temperature inactivates the microorganisms, thus slowing down the multiplication of microorganisms • For example fish and meat

  3. Heating • Heating kills the microorganisms and spore.

  4. Canning and bottling • Bacteria are killed by heating. Sealing the can in vacuum prevents the entry of microorganism. Microorganism cannot survive in the absence of oxygen in sealed cans.

  5. Adding preservative • Preservative can prevent the growth of microorganisms. • For example adding sulphur dioxide to fruit juices • Cakes

  6. Pasteurization • 1):Pasteurization Food is heated to 72 for 15 seconds , then quickly cooled down to 10. • 2): Food is heated to 63-68 for 30 minutes ,then quickly cooled down to 10 • For example milk and alcohol

  7. Smoking • The meat or fish is hung over a charcoal fire . the smoke dries the surface and also coats the meat or fish with substance inhibiting the growth of bacteria

  8. Pickling • Food and vegetables .is salted first, the smoke dries the surface and also coats the meat or fish with substance inhibiting the growth of bacteria .

  9. Natural drying (dehydration) • It must be less than 15 C. • Use the wind or sun to make food dry. • For example mushroom ,shark’s fin
