  2. What is HACCP? • Hazard Analysis Critical Control Points • System used by food processors • Identifies where contamination occurs and prevents it from happening again

  3. E. coli bacteria Salmonella bacteria E. coli and Salmonella • Both are common organisms • Both have pathogenic strains • E. coli 0157:H7 and Salmonella DT104

  4. Antibiotic Resistance • Studies show that these bacteria are becoming more resistant to Antibiotics • Poses a problem for preventing infections with traditional oral antibiotics • Limits treatment options
